In France where McDonalds sold more fast food then any of their outlets anywhere else in Europe in 2008, Slow Food is now established as a force to help and advise.

Nous vous convions de l’autre côté de l’Espinousse, sur les hauteurs des plateaux du Haut-Languedoc, là où les trois départements de l’Hérault, du Tarn et de l’Aveyron se rejoignent.
We invite you to the other side of the Espinousse, to the Haut-Languedoc uplands where the Hérault, the Tarn and the Aveyron meet.

La Charcuterie artisanale MILLAS (www.charcuterie-millas.fr) à Moulin-Mage, vous accueillera pour vous faire découvrir les spécialités de la région, et en particulier le melsat, la bougnette, le boudin Lacaunais, et autres produits issus de l’élevage du cochon « Apalhat », un cochon « heureux », qui vit sur la paille, dont la race déposée résulte de la démarche commune de la Charcuterie de Millas et d’éleveurs de la région.
The « Charcuterie artisanale » MILLAS (www.charcuterie-millas.fr) at Moulin-Mage will welcome you to discover the specialities of the région, in particular the « melsat », the « bougnette » and the « boudin Lacaunais », and other products made from the « Apalhat » pig, which lives on straw, whose registered breed has been developed by the « Charcuterie Millas » and pig farmers in the area.

Nous dégusterons ensuite ces spécialités à la Ferme Auberge du Fau, qui surplombe, au-delà de la Croix de Mounis, les belles falaises d’Orques. Elisabeth et Daniel vous y accueilleront pour un repas qui ne vous laissera pas indifférents.
We will then taste this specialities at the Ferme Auberge du Fau which overlooks, beyond the Croix de Mounis, the magnificent cliffs of the Orques. Elisabeth and Daniel will welcome you for a meal which you will not forget.

Après le repas, encore un peu plus loin, à Albes, tout au bout de chemin qui s’arrête là, vous visiterez la chèvrerie Navarro, l’atelier de fabrication de leurs excellents fromages et vous pourrez y admirer leur cinquantaine de chèvres brunes qui mettent bas en ce moment et fournissent leur meilleur lait.
Tout à côté, Thomas vous parlera de son élevage de brebis, de sa viande bio et de ses fromages.
After the meal, a bit further on, at Albes, at the end of the road that goes no further, you will visit the goat farm of Navarro, the place where Florence make their excellent cheeses, and you will be able to admire their brown goats who are giving birth at the moment and producing their best milk.
Just next door, Thomas will talk you about farming sheep about his « bio » meat and his cheeses.

Slow Food which is an international organisation finds itself very much in sympathy with present trends of returning to locally produced food and helping small growers to conserve and bring back into production various varieties of fruit, vegetables and livestock which have been facing rapid extinction caused by the uniformity demanded by the large supermarkets..
Produce locally, buy locally and sample the best of what is, on offer close by

Some may raise their hands and state that as far as prices are concerned, then the supermarkets offer better value for money, that is no longer the case and increasingly local produce is to be found in village shops and in the case of Colombières close to Lamalou les Bains at prices lower than the supermarkets-offer and that does not take into account local products such as charcuterie, fresh meat, local cheeses just to mention a few.

Slow Food through its wide world network now takes active steps to help producers in the developing countries at a recent major Slow Food Exhibition in Tours in the Loire Valley at the end of November, there were producers from Morocco, Croatia, Georgia, Romania, Kazakhstan, Poland who are now getting real help and can offer a return to basics for those who appreciate good food.

The local groups called a Convivium meet on a regular basis, and there are Conviviums based in Montpellier, Narbonne Perpignan and Colombières which has a growing membership from Béziers, Lamalou and Faugères
